Easy Bombay Potatoes

A quick and convenient way to spice up your side dishes! Infused with the flavours of tamarind and garlic. Ideal for cooking in the oven or a savoury accompaniment to any summer barbeque.

INGREDIENTS

Bombay Potato Indian Curry Paste

 

Instructions

  1. Chop and fry an onion in a little oil until soft.
  2. Stir in the Patak’s Bombay Potato Curry Paste for Four and cook for 3 minutes.
  3. Add 350g of diced potato, and 500 ml of water, cover and cook for 30 minutes.
  4. Add 200g of canned chopped tomatoes and simmer for 10-15 minutes until the potatoes are cooked. Add a little water if necessary. Save hot with your favorite Patak’s curry.
  5. 5. Garnish with a little fresh chopped coriander leaf (optional).
