Madras Broccoli (Madras Hari Bhari)

Patak's Madras Paste

 

Instructions

  1. Preheat the oven to 180ºC/ Fan 160ºC/ 350ºF/ Gas Mark 4. In a large bowl mix together the Patak’s Madras Paste, yogurt and garlic. Add the broccoli and red pepper and make sure they are coated well in the marinade.
  2. Transfer the mixture to a roasting tin and bake for 20 - 25 minutes, stirring once or twice. If the vegetables start to brown, cover with a piece of foil.
  3. Add in the pine nuts and cook for a further 5 minutes. Sprinkle with fresh cilantro before serving.
