- Preheat the oven to 180ºC/ Fan 160ºC/ 350ºF/ Gas Mark 4. In a large bowl mix together the Patak’s Madras Paste, yogurt and garlic. Add the broccoli and red pepper and make sure they are coated well in the marinade.
- Transfer the mixture to a roasting tin and bake for 20 - 25 minutes, stirring once or twice. If the vegetables start to brown, cover with a piece of foil.
- Add in the pine nuts and cook for a further 5 minutes. Sprinkle with fresh cilantro before serving.
