This main course dish is filled with festive fall colours and can be made in just 30 minutes. Made for serving family style, you’re sure to have a new festival of lights favourite on your hands.


  • Patak’s 3 Step Tikka Masala
  • 1½ cups cauliflower, cut into small florets, roasted
  • 1½ cups sweet potato, cut into thin medallions, roasted
  • 1 tbsp vegetable oil
  • 50 ml of water


  1. Gently fry the Patak’s Whole Spices in vegetable oil for 20 seconds.
  2. Add the Patak’s Spice Paste along with water and gently fry until the water is almost evaporated. Add vegetables and mix together.
  3. Stir in the Patak’s Base Sauce, bring to a simmer and cook for 15 minutes.

To roast the cauliflower and sweet potato:

  1. Pre-heat oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower and sweet potato in 1 tbsp vegetable oil and a sprinkle of salt and pepper.
  3. Place in a foil-lined roasting pan and roast in over for 20 to 30 minutes until tender.


Mix up your dish by replacing the vegetables with pan-fried paneer cheese and spinach. Simply add the cheese and spinach during the final step and reduce the cooking time until thoroughly heated.
