Asparagus Prosciutto Phyllo Broomsticks

  • Asparagus spears – you will need 3 spears for every broomstick. If you can’t find fresh ones frozen works quite well in this recipe
  • Phyllo pastry – one sheet will make 3 broomsticks
  • Prosciutto – one piece per broomstick
  • Patak’s Sweet Mango Chutney – about 1/2 tsp per broomstick
  • Cooking spray or melted butter


  1. Bundle together 3 asparagus spears and wrap them in one piece of Prosciutto, leaving the tips and the ends exposed.
  2. Use a basting brush to cover the Prosciutto in the Sweet Mango Chutney
  3. Pull out one sheet of phyllo pastry and lay it flat on your working surface.
  4. Wrap the other pieces in a towel so they don’t dry out.
  5. Cut the phyllo lengthwise into a strip about the same width as the prosciutto that is wrapped around your asparagus.
  6. Spray the piece of pastry lightly with cooking spray or brush lightly with melted butter.
  7. Wrap the asparagus and Prosciutto with the pastry.
  8. Repeat with each broomstick you want to make.
  9. Place the broomsticks on a cookie sheet, spray them with cooking spray or brush with melted butter and put in an oven which has been preheated to 375
  10. Cook for 15-20 minutes or until the pastry is a nice golden color
  11. Remove from oven and very gently move them to a wire rack to cool slightly before serving.
