BBQ Salmon Packets are a great way to make fish on the grill. The packets help lock in all of the delicious Madras flavour, while keeping the salmon juicy and intact. These packets are perfectly paired with a side of skewered eggplant, zucchini, and yellow peppers brushed with Tandoori Paste.


  • 2 medium sized salmon fillets
  • 1 lemon
  • 100ml of Patak’s Madras Paste


  1. Cook the Patak’s Madras Paste with 3 tablespoons of water in a frying pan on medium heat for a few minutes to release the full flavours and aroma of the paste, let the paste mixture cool
  2. Brush the cooled paste on the salmon, place a slice of lemon on top of each and enclose the salmon within a tinfoil packet
  3. Place the salmon on the barbecue at medium heat
  4. Ensure salmon is cooked to at least 70°C and serve
