Ingredients

  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 teaspoon Patak's Madras Curry Paste
  • 1 cup milk
  • 1 cup white sugar
  • 3/4 cup cocoa powder

Instructions

  1. Preheat oven to 350 degrees
  2. Grease a square baking pan (8 in)
  3. In a saucepot, melt butter over medium heat
  4. Once melted, remove from heat and stir in sugar, eggs and vanilla until combined
  5. Whisk in cocoa, flour, salt and baking powder until smooth
  6. Pour the mixture into the baking pan
  7. Bake for 25-30 minutes
  8. Leave to cool
  9. Once brownies have cooled, heat curry paste in a small saucepan over medium heat until fragrant
  10. Add milk, sugar and cocoa and whisk constantly until syrup is heated and thickened
  11. Slice brownies and top with a spoonful of sauce
  12. Enjoy!
