Curried Roasted Pumpkin

  • 1 medium pumpkin as a serving bowl
  • 1 medium pumpkin to cook
  • 1 onion diced
  • 1 tomato diced
  • 1 clove of garlic
  • Salt and pepper
  • 2 TBSP of Patak’s Tikka Curry Paste
  • 2 TBSP of vegetable oil


  1. Wash your pumpkin. Make few holes with a fork.
  2. Microwave it for few minutes.
  3. Let it cool and then cut it in small serving bites. By microwaving it, it will be easier to remove the skin from the flesh.
  4. Heat a large frying pan. Add oil and onions until it softens. Add garlic.
  5. Reduce heat to low.
  6. Add the Patak’s Tikka Curry Paste and tomato. Let it cook for 5 minutes.
  7. Add pumpkin and cover. Let it cook for 10 to 15 minutes or until pumpkin is tender. Make sure to stir occasionally. If needed, add some water. The tomatoes will release their water so you won’t necessarily need to add.
  8. Serve in your pumpkin bowl.


You can serve this curried pumpkin roast with rice or naan bread.
