1 red pepper, seeds removed and cut into bite size pieces
1 tbsp pine nuts
1 tbsp fresh cilantro, to garnish
Preheat the oven to 180C/ Fan 160C/ 350F/ Gas Mark 4. In a large bowl mix together the Patak's Madras Paste, yogurt and garlic. Add the broccoli and red pepper and make sure they are coated well in the marinade.
Transfer the mixture to a roasting tin and bake for 20 - 25 minutes, stirring once or twice. If the vegetables start to brown, cover with a piece of foil.
Add in the pine nuts and cook for a further 5 minutes. Sprinkle with fresh cilantro before serving.
