If your family can handle a nice dose of spice during the festive period, then don’t hold back on serving up this festive Madras. Coriander, cumin, turmeric and chilies in our Madras paste bring a whole new lease of life to those leftovers.

Ingredients

  • 2 tbsp oil
  • 1 large onion, diced
  • 2 tbsp Patak’s® Madras Spice Paste (or 1 jar Patak’s® Madras Cooking Sauce)
  • ¼ cup water
  • 1 ½ cup canned tomatoes, chopped
  • 400 g turkey, diced
  • 2 tbsp plain yogurt
  • Salt, to taste
  • 2 tbsp fresh coriander, chopped

Instructions

  1. Heat the oil in a pan and fry the onion for 3 min. 
  2. Add the Patak’s® Madras Spice Paste and the water, and fry for 2 min. 
  3. Add the tomatoes and cook for 5 min. 
  4. Add the turkey and cook for 5 to 10 min, adding water as necessary if the sauce is too thick. 
  5. Add the yogurt, salt and coriander. 
  6. Cook for 5 min, or until the turkey is tender and cooked through.
