Mini Curried Quiches

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp Patak's Mild Curry Paste
  • 1 tsp garlic powder
  • 4 eggs
  • 1 cup milk
  • 1 head of broccoli, diced
  • 1 medium onion, diced
  • 1 handful of shredded cheddar cheese
  • 18 tart shells, thawed

Instructions

  1. Preheat oven to 375
  2. Thaw the mini tart shells and place into mini muffin tin
  3. Pierce crust with fork (to prevent rising)
  4. Pre-bake tart shells for 5-8 minutes, until lightly browned
  5. Remove tart shells and set aside to cool
  6. In bowl, mix eggs, milk, and garlic powder - put aside
  7. In a saucepan over medium heat, add oil and curry paste - cook until fragrant
  8. Add onions and broccoli to saucepan and cook until onions are translucent and broccoli is tender
  9. In each tart shell, sprinkle broccoli mixture with a bit of cheese, leaving a little room for the egg mixture
  10. Pour in the egg mixture until just slightly below the edge of the crust
  11. Top each quiche with a sprinkle of cheese
  12. Bake quiches at 375 for approximately 25 minutes
  13. Set out to cool slightly - serve them warm or cold
