Ingredients

  • 3 tbsp oil
  • 1 onion, finely chopped
  • 1 carrot, finely sliced
  • 2 stalks celery, chopped
  • 1 red pepper, cut into pieces
  • 1 potato, peeled and diced
  • 2 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 8 whole black peppercorns (optional)
  • 1 bay leaf
  • 1 cup red lentils, washed and drained
  • 1 apple, peeled, cored and sliced
  • 4 tbsp Patak’s® Korma Spice Paste
  • 5 cups vegetable stock
  • Fresh coriander, chopped (garnish)
  • ¼ cup sour cream (garnish)

Instructions

  1. Set the multifunction pressure cooker to “Sauté”. 
  2. Heat the oil and add the vegetables and spices. Sauté for about 5 min. 
  3. Add the lentils, apples and the Patak’s® Korma Spice Paste. 
  4. Add the vegetable stock. 
  5. Cook on “Pressure Cook” setting for 15 min on “High”. 
  6. Discard the bay leaf. 
  7. Using a handheld blender, process to a smooth texture. 
  8. Garnish with coriander and sour cream.
