Potato & Squash Baked Samosa Recipe with Mango Chicken

  • 1 onion chopped
  • 2 tbsp of olive oil
  • 2 potatoes peeled and diced
  • 1 butternut squash peeled
  • 1 can of Mango Chicken Sauce
  • 1 pack of pastry sheets. I found them in a specialty store. Some people use Phyllo for the recipe.


  1. Preheat oven 350F
  2. In a pot, bring water to boil
  3. Add diced potato
  4. In the meantime, microwave butternut squash for 7 minutes or until tender.
  5. Let it cool and dice it.
  6. Heat a pan. Add oil.
  7. Add onion and cook it until it softens
  8. Add potatoes, squash and half of Mango Chicken Sauce
  9. Reduce heat and let it simmer for 10 minutes.
  10. Add a greased baking sheet to a baking pan.
  11. On a large clean cutting board, display your pastry sheets.
  12. Cut them in half
  13. Scoop one tbsp of filling in the pastry sheet. Fold in triangles.
  14. Repeat until you have no longer filling or pastry sheets.
  15. Brush the samosa with some melted butter or margarine.
  16. Bake for 10 min until golden brown.
