Spaghetti Squash in Pumpkin

  • 1 Spaghetti squash
  • 4 Medium pumpkins (Depending on the number of guests, adjust the number of pumpkins because you will use them as serving bowl)
  • 2 to 3 tsp of Patak’s Mild Curry paste
  • 2 TBSP of butter
  • Salt and pepper to taste


  1. Heat oven at 350F
  2. Wash the squash
  3. Half it
  4. Add a cooking sheet on a large cooking tray
  5. Add 1 TBSP on the cooking sheet
  6. Put the 2 halves of squash face down
  7. Bake for 30 minutes
  8. Let it cool
  9. Wash the pumpkin and dry it.
  10. With a large knife, cut off the top of the pumpkin and remove the lid
  11. Remove the seeds
  12. Cut off the guts until you have a nice clean surface. Then scrape as much as you can.
  13. Dry inside off with a towel.
  14. Heat a large wok. Add the remaining butter
  15. Scoop the squash in the wok.
  16. Add the curry paste and stir. Depending on your taste, you can use less or more curry.
  17. Add salt and pepper to taste.
  18. Serve in the pumpkin.
