Spiced Chick Peas and Zucchini Pilau

  • 1 1/2 cups rice
  • 4 tbsp oil
  • 1 tsp mustard seeds
  • 1 inch piece cinnamon bark
  • 4-5 whole black peppers
  • 2 cloves
  • 2 tbsp Patak's Biryani Curry Paste
  • 1 onion, sliced
  • 1/2 cup chick peas
  • 375ml water
  • 1 zucchini, sliced in 10mm slices


  1. Heat oil in a deep heavy bottom pan and crackle whole spices and mustard seeds.
  2. Add onions and cook for 2-3 minutes
  3. Add Patak's paste and cook for 2-3 minutes on medium heat.
  4. Add water and bring to boil.
  5. Add rice and cook on medium heat till 60% of water is evaporated.
  6. Add chick peas and zucchini and cook for a minute on simmer. Cover the pan and cook for 10 minutes on simmer till all the water is evaporated and the rice is cooked or 15 minutes with lid on and no flame.
  7. Serve hot.
