  • 4 Eggs
  • 1 tsp Patak’s Mild Curry Paste
  • 1 medium onion
  • 1 medium tomato
  • 4 Brioche buns
  • Few springs Coriander
  • 1 tbsp oil
  • 2 green chillies
  • 1 tbsp butter
  • Salt and pepper to taste


  1. Heat butter in a pan. Add onions, tomatoes and green chillies for a spicy option! Sauté 1 minute, until fragrant.
  2. Add Mild Curry paste to the pan along with 50 ml of water.
  3. Once water has evaporated, add beaten eggs and chopped coriander and scramble.
  4. Add salt and pepper to taste.
  5. Toast and butter a sweet bun of your choice, we recommend a nice Brioche, then add spiced scramble eggs on top.
  6. Garnish with coriander.
  7. Enjoy with bacon and sliced tomato.
